Abstract:

PURPOSE: To obtain the subject dried 'MIRIN' [sweet SAKE (Japanese rice wine)]-seasoned cattle meat having light taste close to that of a Japanese-style food and unique flavor in spite of cattle meat by slicing the cattle meat, dipping the sliced cattle meat in a seasoning solution containing 'MIRIN', then drying the dipped slices, subsequently steaming the dried slices, further drying the steamed slices and spraying the 'MIRIN' thereon.

CONSTITUTION: The objective dried 'MIRIN'-seasoned cattle meat obtained by slicing cattle meat to a thickness of about 2-10mm, dipping the resultant slices in a seasoning solution containing 'MIRIN' for 15-48hr, then drying the dipped slices, subsequently steaming the dried slices, further drying the slices and spraying the 'MIRIN' thereon.
