Abstract:

PURPOSE: To improve the long-term emulsion stability of a drink without deteriorating the taste and flavor by using a medium-chain fatty acid triglyceride as a fat component.

CONSTITUTION: A drink such as milk coffee or cocoa is added with ≤10wt.% of a medium-chain fatty acid triglyceride as a fat component, homogenized at 60-70°C under a pressure of ≥250kg/cm2, filled in a container and sterilized with heat.
