Abstract:
To obtain a bread yeast capable of quickly manufacturing various tasty breads without requiring regeneration with sugar solution but able to quickly rise only in the existence of water.
The dry bread yeast prepared by using diploid practical bread yeast is obtained by crossbreeding the ATH1 and/or NTH1 gene damaged monoploid yeast consisting of gene damaging treatment of the ATH1 and/or NTH1 gene of a monoploid yeast having a mating type 'a' which become a practical bread yeast when changed into the diploid and the ATH1 and/or NTH1 gene damaged monoploid yeast consisting of gene damaging treatment of the ATH1 and/or NTH1 gene of a monoploid yeast having a mating type 'a' which become a practical bread yeast when changed into the diploid.
