Abstract:
To provide an edible plant powder composition with improved flowability and excellent handleability.SOLUTION: An edible plant powder composition has a starch content of 35 mass% or more in dry mass and a pregelatinized starch content of 80 mass% or more in starch. In the edible plant powder composition, a particle size distribution 50% particle diameter measured by a laser diffraction scattering particle size distribution method is 5 to 500 μm, and a flowability index which is indicated by the sum of indices obtained from respective physical property values of the angle of repose, a spatula angle, a degree of compression, and a degree of uniformity is 45 to 89.SELECTED DRAWING: None
