Abstract:
PROBLEM TO BE SOLVED: To provide a dispersion for lamination in which water phase is continuous in order to produce laminated dough of excellent performance. SOLUTION: This dispersion for lamination contains a combination of hydrocolloids. On the basis of a non-lipid component in the lamination dispersion, 0.5-40% protein hydrocolloid and 1-60% non-protein hydrocolloid or gelatin are contained. The water content in the dispersion is 15-90% while the lipid content is 0-80%. A preferable combination of hydrocolloids is a malto-dextrin liable to form aggregated gel and sodium casein. Other preferable dispersion for lamination contains cheese containing no melting salt as a base.
