PROBLEM TO BE SOLVED: To provide a fryer and a method to fry food materials which are to drastically prolong cooking oil's life span, drastically cut down frying time, and drastically improve deterioration of the oil, while achieving quickly frying fries which, for a long time, can keep good mouthfeel and merits, such as things that they can be fried crispy, keeping crispy even after a long time, they do not lost their crispy texture after rewarmed with a microwave oven, and so on.SOLUTION: A food fryer includes an electrode structural body which possesses electrodes to apply electric voltage to cooking oil during frying food materials. The food fryer fries the food materials in a prescribed range of temperature by heating the cooking oil in its oil tank. Films which consist of a material with a low work function are provided on the surfaces of the electrodes of the electrode structural body.
