Abstract:

To obtain the subject new glycosyl ester-decomposing enzyme simultaneously having a β-glucosidase activity, originated from a bacterium belonging to the genus Clavibacter, greatly high in a glycosyl ester bond-decomposing activity and useful for food processing, food industry, etc.

This new glycosyl ester-decomposing enzyme simultaneously having a β-glucosidase activity is greatly high in an activity to decompose the glycosyl ester bond, exhibits larger specificity on the glycosyl ester bond than on a glycosyl ether bond, acts on p-nitrophenyl-β-glucoside, rubusoside, stevioside and rebaudioside A, does not act on steviolmonoside and gentiobiose, is used for decomposing natural glycosides and can be utilized for food processing, food industry, etc. The enzyme is obtained by culturing a Clavibacter bacterium [e.g. Clavibacter michiganense C293 (FERM P-16131)], grinding the obtained cells, extracting the ground cells, separating the product from the extraction solution, and subsequently purifying the product.
