Abstract:

PURPOSE: To obtain an enzyme derived from Aspergillus niger B1, capable of enhancing taste and flavor of a plant extract such as fruit juice or a fermentation product.

CONSTITUTION: This enzyme is produced by a mutant species CMI CC 324, 626 of Aspergillus niger B1. An enzyme having activity selected from endoβ- glucosidase activity, tannase activity and anthocyanase activity is added to an extracted solution of a plant or a fermentation product to increase the concentration of a monoterpene. Consequently taste and flavor can be enhanced.
