Abstract:

PURPOSE: To obtain a compd. useful as a fat substitute having improved oxidation stability and flavor stability by adding antioxidant to propoxylated polyol or a fatty acid before the polyol is esterified with the fatty acid.
CONSTITUTION: First, a polyol is alkoxylated, and the obtd. alkoxylated polyol is esterified with an excess amt. of (un)satd. fatty acid. Before the esterification, an antioxidant is added to the alkoxylated polyol or (un)satd fatty acid, and then the esterification is performed. In the final stage, the esterified alkoxylated polyol is purified. As for the antioxidant, a mixture comprising α,β,γ and δ- tocopherols is preferably used. As for the alkoxylated polyol, propoxylated glycerol prepared by propoxylating a glycerol is preferably used.
