PURPOSE: To obtain an extract having antihypertensive action from soy sauce lees.

CONSTITUTION: Soy sauce lees are extracted with water or an alkali, the extracted solution is desalted and treated with an adsorbing resin or active carbon to give an extract having antihypertensive action. The extract is useful as a functional food material.
