This far infrared drying equipment is composed so as to dry materials which are arranged on shelves for housing in a drying chamber and are to be dried by the far infrared rays and/or ventilation. The shelves are formed from a material capable of changing the directionality of the far infrared rays and further formed into the shape capable of passing a quantity of far infrared rays effective in drying the materials to be dried. The far infrared rays are radiated in the interval between the adjacent shelves. Thereby, the fishery products, fishery processed products or other foods can accurately be dried to a desired moisture content and the dried products excellent in texture and Umami, etc., and capable of holding the surface elasticity and flexibility are obtained.
