Abstract:
To provide methods for producing fermentation products that detect a fermentation product in a culture medium by discriminating concentration of the fermentation product dissolved in the culture medium and concentration of the fermentation product precipitated as crystal.SOLUTION: Disclosed is a method for producing a fermentation product comprising the steps of: providing a fermentation vessel (1), a near-infrared spectroscopic sensor (2) to measure characteristics of culture fluid (L), and an analyzer (4); feeding the culture fluid to the fermentation vessel; inputting the detection signals from the near-infrared spectroscopic sensor to the analyzer while running the fermentation vessel; calculating by the analyzer at least two of concentration of the fermentation product dissolved in the culture fluid, concentration of the fermentation product precipitated as a crystal in the culture fluid and total concentration of the fermentation product in the culture fluid on the basis of the detection signals from the near-infrared spectroscopic sensor; and adjusting the fermentation operation conditions on the basis of the calculated concentrations of the fermentation product.SELECTED DRAWING: Figure 1
