Abstract:
PURPOSE: To obtain a fermenting device equipped with means for uniformly circulating humidified and heated air through a fermenting chamber and achieving uniform fermentation of dough of bread.
CONSTITUTION: Plural wind-direction plates 27 outward opening toward the lower part are mounted at a delivery port of a duct 14, humidified and heated air is uniformly circulated through a fermenting chamber. Struts 8a and 8b before and behind a net shelf are equipped with communicating holes 33 and 34 to receive and horizontally deliver the circulated air and the air is made to stream in the same air flow both in a position before and behind the net shelf and a central division position to uniformly ferment dough of bread.
