To provide a soybean protein fiber structure having excellent stretchability when moisturized, by fully utilizing moisture swelling property of soybean protein fiber, and to provide a production method of the soybean protein fiber structure, capable of efficiently producing the structure.
The soybean protein fiber structure is a fiber structure composed mainly of soybean protein fiber and having 15-300% elongation and/or 70% elongation recovery when the structure is moisturized, and the production method of the soybean protein fiber structure includes molding the fiber composed mainly of soybean protein fiber into fiber structures such as a yarn, a textile or a knitting, then, after refining in the processing stage and previously, hygrothermally treating to contract 20-70% in the longitudinal direction of the fiber structure, and finishing.
