Abstract:
To provide a filling base capable of achieving the following (1) and (2): (1) to obtain a filling capable of preventing oil-water separation and solid-liquid separation from occurring by baking and re-heating and (2) to obtain a filling having smooth texture and excellent melting feeling in the mouth.SOLUTION: A filling base has a water content of 50-75 mass%, an oil and fat content of 15-35 mass%, a carbohydrate content of 2-16 mass% and a pH of 4.0-5.6, and consists of an oil-in-water type emulsified material including starches.SELECTED DRAWING: None
