Abstract:
A process for filling bakery products comprises piercing with an ordered array of needles the already cooked bakery product (1) to deposit therein a component having a substantially creamy or semi-liquid nature. The tracks (2) left by the piercing by the needles constitute reference elements (4) for cutting in slices the bakery product between the tracks in order to provide slices of the product which have an elongated filled area. The product may be subsequently decorated above the filled areas.
