To provide an enzyme (F3Gal/GlcT) transferring any of galactose and glucose onto the 3-site of flavonoid, to provide a polynucleotide encoding the enzyme, to provide a vector including the polynucleotide, and to provide e.g. a transformant obtained using the vector.
The vector includes a polynucleotide comprising a specific base sequence or a polynucleotide encoding a protein comprising a specific amino acid sequence. The transformant or the like is obtained by using the vector. Further, a UGT enzyme (F3Gal/GlcT) has new activity of transferring glucose or galactose onto the 3-site of flavonoid from grape. It becomes possible to artificially glycosylate the 3-site of flavonoid with glucose or galactose, thus enabling contributing to the development of new functional food materials and the development of plants producing useful compounds.
