This flavor improver comprising mannose as the active ingredient enables the sharp taste, acid taste or the like of foods mentioned below to be soften to turn into mild one by adding it to various foods/drinks such as bread, soy sauce, stock, mirin, soup, coffee, black tea, juice, crude drugs and the like.
