Abstract:
PROBLEM TO BE SOLVED: To provide a mix for foamable food capable of adding good balance of foamability and shape retention property on whole of a foamable food, and the foamable food good in balance of foamability and shape retention property.SOLUTION: There is provided a mix for foamable food containing powdered oil and fat, the powdered oil and fat contains monoglyceride acetate, DSC curve when increasing temperature from 10°C to 60°C at a temperature rise rate of 5°C/min. and melting the powdered oil and fat satisfies following conditions (a) to (c) in a measurement by a differential scanning calorimeter (DSC) targeting the powdered oil and fat. (a) an endothermic peak temperature is 28°C to 33°C. (b) melting initiation temperature of 25°C or more. (c) endothermic quantity is 1.0 J/g to 17 J/g.SELECTED DRAWING: Figure 1
