Abstract:

PURPOSE: To obtain a food similar to dressing or mayonnaise and having excellent taste and flavor, by grinding and mixing the edible part of a fruit having high fat-content, oils and fats, separated soybean protein, and food vineger in a manner to give a specific composition.

CONSTITUTION: The objective food can be prepared by compounding (A) 100pts.wt. of the edible part of a fruit having high fat-content, e.g. avocado, olive, etc. with (B) 80W150pts.wt. of oils and fats (e.g. soybean oil), (C) 1W 5pts.wt. of separated soybean protein (preferably in the form of powder), and (D) a selected amount of food vinegar to attain a solid content of 15W50wt% and a pH of 3W 5, and grinding and mixing the composition.
