This food deterioration preventing agent comprises an extract of a plant belonging to the genus Lonicera and prevents or suppresses color fading of food. The method for producing the food deterioration preventing agent comprises an extraction process of extracting through adding an extraction solvent to a plant belonging to Lonicera, a process of acidifying the extracted solution obtained in the extraction process, a process of bringing the acidified extracted solution into contact with a synthetic resin absorbent, and a process of collecting fraction absorbed into the synthetic resin absorbent.
