PROBLEM TO BE SOLVED: To safely and effectively suppress food deterioration due to enzyme existing in a food by incorporating the food with a specific antibody as a food preservative.
SOLUTION: Food deterioration due to enzyme (volume reduction, deterioration of physical properties, emission of offensive odor, flavor deterioration, discoloration, depression of nutrient, etc.) is suppressed by incorporating an antibody to the enzyme naturally occurring in food materials. This food preservative containing the antibody can be prepared in the form of whole egg powder, yolk powder, etc. from immunized chicken eggs.
