To obtain a food material for zinc supplement having no toxicity, excellent in gustatoriness and flavor, high in safety, having no problem in its processability and containing chelate-type zinc ingredients of high absorbability in high concentrations, to obtain a zinc-conjugated protein, and to obtain a zinc-conjugated polysaccharide protein.
This food material for zinc supplement is such one as to comprise at least one kind of basidiomycete selected from the genuses Lentinus, Glifora and Agaricus, and contain ≥0.5 g of zinc ingredients in 100 g of the basidiomycete. The second objective zinc-conjugated protein and the third objective zinc-conjugated polysaccharide protein are such ones as to each contain ≥5 g of zinc ingredients in 100 g of the zinc-conjugated protein and zinc-conjugated polysaccharide protein respectively. A method for producing this food material for zinc supplement comprises cultivating at least one kind of basidiomycete selected from the genuses Lentinus, Glifora and Agaricus in a culture medium containing water-soluble zinc ingredients to let the basidiomycete assimilate zinc ingredients to include zinc ingredients in high concentrations in the protein and polysaccharide protein in the basidiomycete cell component and/or extracellular component.
