In this vessel recovering device in a restaurant having a vessel recovering passage, a dish washer is arranged in the tail end part of the vessel recovering passage for washing the dishes recovered by the vessel recovering passage, and a dish retreating device is arranged in the middle of the vessel recovering passage for temporarily retreating the dishes on the vessel recovering passage from the vessel recovering passage as dish washing work by the dish washer becomes an overflow state, and returning the temporarily retreated dishes again on the vessel recovering passage as the dish washing work by the dish washer becomes an allowance state.
