Abstract:

PURPOSE: To provide a forming process for heat coagulating food capable of reducing the number of working processes, excellent in releasability from a molding case and useful for e.g. boiled egg.
CONSTITUTION: This process consists of the first process for introducing an edible oil and a heat coagulating food (e.g. whole egg) into a hollow molding case 10 having an upper opening which has water resistance, heat resistance and oil resistance through the upper opening 20, the second process for heating the case 10 to coagulate the heat coagulating food (e.g. whole egg) placed in the case and the third process for taking out the coagulated food product (e.g. boiled egg) from the upper opening 20 from the molding case 10.
