Abstract:

PURPOSE: To extend the freshness retention time of lobster and crab without having adverse effect on human health, by treating lobsters and crabs with kojic acid.

CONSTITUTION: Lobsters and crabs are treated with kojic acid. Said treatment process is e.g.: (1) lobsters and crabs are immersed in an aqueous solution of koji acid, (2) an aqueous solution of koji acid is sprayed on lobsters and crabs, (3) the ice produced from said aqueous solution is sprayed on lobsters and crabs, or (4) koji acid-contg. powder is coated on lobsters and crabs.
