Abstract:
To provide fried foods capable of having a coating of short and crispy palatability even reheating in an electronic oven or an oven, etc., after frying and freezing, if required, and a process for production of the same.
The surface of an ingredient material is adhered with the primary batter fluid containing alkali, oil and fat, adhering the primary crumbs containing at least one selected from among corn flour, protein, starch, bread crumb, cracker crumb, adhering the secondary crumbs containing at least one selected from among corn flour, protein, starch bread crumb, cracker crumb after adhering the secondary batter fluid, then frying, freezing if required to obtain this fried foods.
