Abstract:

To provide a frying tray, an edible oil temperature adjustment and circulation type fryer and a frying method using the frier, suitable for cooking each type of fried food such as a croquett and a pork cutlet.

A frying tray 1 for fried food has a base frame 2 with a handle 3, as well as a plurality of separator frames 5a and 5b and a plurality of foodstuff support frames 6 projected from the front of the base frame 2 at gaps right and left, thus holding and frying a plurality of foodstuff (b). Also, this edible oil temperature adjustment and circulation type frier 10 has a frying tank 11, a temperature adjusted edible oil inflow tank 12 formed at one side of the frying tank 11 for continuously flowing temperature adjusted circulation edible oil (a1) to the upper and lower parts of frying edible oil in the tank 11, a circulation tank 13 formed at the other side of the tank 11 for tank out a part of frying edible oil from the frying tank 11 as circulation edible oil (a2) from the upper and lower parts, and temperature adjustment and circulation passages 15 to 18 formed between the circulation tank 13 and the temperature adjusted edible oil inflow tank 12 for adjusting the temperature of the circulation edible oil (a2) for causing the re-circulation thereof as the circulation edible oil (a1).
