PURPOSE: To prevent the block formation of materials to be dried in a basket, by dipping a frying basket in oil to protrude the top thereof above the oil surface and frying the materials to be dried while stirring the materials to be dried.
CONSTITUTION: Materials to be dried are filled in a frying basket 5 through which oil 2 is flowable and the frying basket 5 is then dipped in the oil 2 in a frying bath 1 to fry the materials to be dried with the oil 2 under reduced pressure. In the process, the frying basket 5 is dipped in the oil 2 to protrude the top thereof above the oil surface. The materials to be dried are fried while stirred with oil jetting streams from oil jetting nozzles 12. As a result, the block formation of the materials to be dried in the basket 5 can be effectively prevented to efficiently produce the materials to be dried, e.g. dried food, etc., without suffering from disadvantages, e.g. lowering of drying rate, nonuniformity of dried state, binding and deforming of the dried materials, etc.
