Abstract:
PROBLEM TO BE SOLVED: To provide a novel functional hard candy inhibiting degradation of GABA and containing a certain amount of GABA as an active ingredient, and a manufacturing method therefor.SOLUTION: There is provided a hard candy containing a center part and a hard candy part coating at least a part of a surface of the center part, the center part consists of oil and fat processed article containing γ-aminobutyric acid and the content of the center part is 3 to 30 wt% of whole hard candy. There is provided a functional hard candy containing the γ-aminobutyric acid as an active ingredient. The hard candy can be obtained for example by a manufacturing method having a process for coating at least a part of the surface of the center part consisting of the oil and fat processed article containing γ-aminobutyric acid with the hard candy part of which an article temperature is adjusted at 60 to 80°C.SELECTED DRAWING: None
