This garbage disposer includes a disposal tank 1a accommodating a microbe carrier 1b for decomposing an organic matter, a humidity sensor 11 for detecting humidity in the disposal tank 1a and a humidity control means (not shown) for controlling the humidity in the disposal tank 1a in response to the output from the humidity sensor 11, wherein, during the start of use of a garbage disposer body 1 to a predetermined period, "start-up operation" for controlling the humidity control means is carried out so as to keep the humidity in the disposal tank 1a higher than usual, and during the initial period having the low activity of a microbe, since the control is carried out so as to keep the humidity higher without rise of the temperature in the disposal tank 1a, the microbe can be swiftly activated while suppressing generation of the odor.
