Abstract:
To provide a gel strength regulator for agar readily regulating the intensity of gel strength of the agar, to provide a gelling agent for the agar making an agar solution gel at various temperatures and to provide an agar composition.
The gel strength regulator for the agar comprises tannin. The gelling agent for the agar comprises a tannin activity inhibitor and makes the agar gel by addition thereof to the agar solution in which the gelation is inhibited by the gel strength regulator for the agar. The agar composition comprises the tannin and the agar.
