PURPOSE: To obtain a GTase inhibitor capable of providing inhibitory action on formation of bacterial plaque by adding to materials to be supplied to the oral cavity such as various foods and dentifrices, comprising ellagic acid or a salt thereof as an active ingredient.
CONSTITUTION: 50g Geranium thunbergii is immersed in 800ml 70% ethanol, ethanol is filtered and concentrated under reduced pressure. The concentrate is dissolved in water, adsorbed on adsorbent HP-20, the adsorbent is eluted with 75% methanol and concentrated under reduced pressure. The concentrate is dissolved in methanol, subjected to gel filtration and a GTase inhibitor comprising ellagic acid as an active ingredient is obtained from a fraction having strongly inhibitory activity GTase (glucosyl transferase).
