To provide grease for food equipment with which safety as a product is also assured by use of a raw material of high safety for human body, and to provide its producing method.
The grease for the food equipment is produced by dispersing a powdery calcium stearate of a maximum particle size of ≤0.3 mm as a thickener with agitation in a base oil at 62-100°C so as not to be dissolved to form a fibrous structure of the calcium stearate. The base oil comprises a fatty ester and an oil wherein the ratio of the fatty ester to the oil is 0.5 wt.%:99.5 wt.%-100 wt.%:0 wt.%, in which the fatty ester is selected from among a glycerol fatty ester, a polyglycerol fatty ester and a propylene glycol fatty ester having at least one hydroxy group derived from glycerine or propylene glycol, and the oil is selected from among an animal oil, a vegetable oil, a synthetic oil, a semi-synthetic oil or liquid paraffin as a food product or a food additive.
