Abstract:
PROBLEM TO BE SOLVED: To obtain a hard candy free from effusion of oil and fat to the surface of the candy in condensation, cooling forming and storing and easy to crush in eating, excellent in flavor by including the predetermined amount of fats and oils having volumetric fat particle size median value less than the predetermined value.
SOLUTION: This hard handy includes 15 to 45 wt.% of oils and fats such as palm oil or the like having volumetric fat particle size median value ≤20 μm. This hard candy preferably includes 0.2 to 25 pts.wt (per 100 pts. of oils and fats) of surfactants comprising polyglyceryl fatty acid ester having 10 to 20 of HLB, fatty acid ester of glycerin having 1 to 5 of HLB, and fatty acid ester of saccharose having 11 to 16 of HLB.
