Abstract:
To provide wheat flour for yudane breads capable of obtaining yudane breads having sweet feeling by containing much maltose, a bread dough using the same and yudane breads obtained by firing the bread dough.SOLUTION: In the production of yudane bread, the yudane is prepared using a dry heat treated wheat flour containing a prescribed amount of wet wheat gluten, and by producing bread dough using the same, the yudane breads having sweet feeling by containing much maltose can be obtained.SELECTED DRAWING: None
