Abstract:

To provide oil-and-fat emulsion pickling solution infiltrating low-fat meat with oil to impart satisfactory juicy feeling to the meat and soften the quality of the meat so as to improve the palate feeling of the meat: to provide a high-oil emulsified oil-and-fat composition suitable for preparing the oil-and-fat emulsion pickling solution: and to provide a meat processing product produced by using the oil-and-fat emulsion pickling solution.

The high-oil emulsified oil-and-fat composition for food to be used for pickling solution comprises edible oil and fat, multiple alcohol and an emulsifying agent. The pickling solution for meat processing is obtained by addition of the high-oil emulsified oil-and-fat composition for food to be used for pickling solution comprising edible oil and fat, multiple alcohol and an emulsifying agent, wherein the composition contains 40-70 wt.% edible oil and fat, the emulsifying agent comprises polyglyceryl fatty acid ester, the average diameter of an oil drop in the high-oil emulsified oil-and-fat composition for food is ≤2μm. The meat product is obtained by addition of the meat processing pickling solution.
