Abstract:

PROBLEM TO BE SOLVED: To provide a soft high-protein baked food containing a protein at a high concentration and having good chewability and meltability in the mouth.
SOLUTION: The high-protein baked food comprises a protein ingredient in an amount of at least 15 wt.% (on the basis of dry weight) based on the whole food, an oil and fat ingredient and a glucide ingredient. The high-protein baked food is obtained by finely pulverizing a first material mixture containing the protein ingredient, oil and fat ingredient and glucide ingredient, stirring the pulverized mixture, preforming a creamy preliminary product, mixing and baking the preformed mixture with a second material mixture prepared separately from the preliminary product and containing at least the oil and fat ingredient and glucide ingredient.
