Abstract:
To provide a high sweetness sweetener-containing emulsified composition capable of improving emulsification stability of an emulsion composition containing a high sweetness sweetener, excellent in dispersion in food product/drink, and capable of being added to a stable food product/drink, so as to solve the problem that it is often difficult to stabilize an emulsified object which is originally unstable in energy aspect, by only polyvalent alcohol fatty acid esters, and at the time, protein, thickening polysaccharide, and natural surfactant may be used together, however, there are problems of anxiety of long term storage, complication of production methods and poor versatility.SOLUTION: There is provided a high sweetness sweetener-containing emulsified composition containing: a surfactant; a high sweetness sweetener; edible oil; and water and/or polyvalent alcohol.SELECTED DRAWING: None
