Abstract:
PURPOSE:To obtain an enzymic agent having a high transesterification activity at a low moisture content and the level of the transesterification activity corresponding to that of the lipolytic activity imparted thereto. CONSTITUTION:This enzymic agent has >=1500 value of transesterification activity (Ka) and >=0.010 value of relative transesterification activity (Kr). This method for producing the enzymic agent is to regulate an enzymic hydrate having a high lipolytic activity such as >=10,000LIU/g based on the solid substance of the enzymic agent in the presence of a polyhydroxy compound and a fatty acid derivative to a low moisture content.
