Abstract:
To provide a method for producing a protein-rich functional porridge premix containing a pea and rice mixture and rice bran.SOLUTION: There is provided a method for producing a protein-rich functional porridge premix, including the steps of: washing and soaking peas and removing water from the peas; pulverizing blanched peas that are sterilized at a high temperature and rapidly cooled at a low temperature; homogenizing pea powder, hydrolyzing a commercial protease, heat-treating at a high temperature to deactivate the enzyme, and centrifuging to obtain a protease decomposition product of peas; drying the protease decomposition product of peas and sieving to remove foreign matter; and mixing pea powder, rice mixture (whole rice, rice grits, rice powder), branched amino acids, rice bran powder, vitamins and minerals to form a porridge premix.SELECTED DRAWING: Figure 1
