Abstract:

PURPOSE: To obtain a chicken meat-processed product which contains collagen and curdlan and is improved in yield by increased moisture retentivity and in quality by juicy texture and taste.
CONSTITUTION: This food product contains (A) powdery collagen in which more than 90wt.% of the particles have ≤0.25mm size and contains less than 80wt.% of crude-protein, less than 10 wt.% of crude fat, less than 1% of ash and ≤10% of water, which is preferably prepared by defatting depilated animal skin, treating the skin with an acid or alkali, neutralizing, drying and crushing and (B) curdlan in an amount of 0.1-10 pts.wt. per 1 pt.wt. of the collagen.
