Abstract:

PROBLEM TO BE SOLVED: To obtain a readily mass-producible enzyme useful for synthesizing stable capsaicins in high yield, and to provide a method for producing the capsaicins using the same enzyme.
SOLUTION: The hydrolyzing and synthesizing enzyme for the capsaicins has physicochemical properties (1) to (3). (1) Actions and substrate specificity: catalyzing a hydrolyzing reaction and/or a synthetic reaction of the capsaicins, (2) range of optimum temperature: about 55°C and (3) range of optimum pH: 7-8. The method for producing the enzyme hydrolyzing and synthesizing the capsaicins comprises culturing a microorganism belonging to the genus Streptomyces and having the ability to produce the enzyme hydrolyzing and synthesizing the capsaicins and collecting the enzyme hydrolyzing and synthesizing the capsaicins from the resultant culture fluid.
