Abstract:
PURPOSE: To provide the subject new compd. derivs, useful for coloring in fishery, foods, etc., obtained by decomposing a dienantiomer, a dienamine or a dienolate of canthaxanthin with an aziridine oxidant, while shortening manufacturing processes.
CONSTITUTION: Canthaxanthin having formula I are dissolved in tetrahydrofuran, which is cooled to -20°C, and sodium hexamethyl disilazine is added to form alkali metal dienolates. The dienolates are oxidized with the oxidant [e.g. trans-2-(phenylsulfonyl)-3-phenyloxaziridine, etc.], having formula II [where R1 is (substd.) phenyl, 3-7C cycloalkyl, etc.; R2 is H or the same residue as R1] to produce an astaxanthin dihemiaminal having formula III (Me is an alkali metal). Astaxanthin having the formula IV, which is useful in fishery and foods industry for ganerally coloring of foods, is obtained by decomposing the compds. in high yield and high purity.
