PURPOSE: To facilitate in/out storing food by providing a constitution for lifting a tube unit having a pressure chamber and a piston unit of applying a high pressure into the pressure chamber, in a device for performing such as extending a storage period by applying the high pressure to act on the food so as to perform sterilization, deactivation, etc., thereof.
CONSTITUTION: In this high pressure processing device for applying a high pressure of several thousand atms to food, a cover unit 3 and a cylinder unit 4 are respectively arranged in an upper frame part 1a and a lower frame part 1b of a supporting frame of rectangular shape as viewed from the front surface, and a pressure vessel 6 serving as a tubular unit formed with a pressure chamber 7 is liftably fitted in the cylinder unit 4. A piston unit 8 of protrusively providing a rod part 8b, fitted into the pressure chamber 7, is fitted into the cylinder unit 4. After mounting the food A onto an upper surface of the rod part 8b by lowering down the piston unit 8 and the pressure vessel 6, only the pressure vessel 6 is lifted and sealed with the cover unit 3, and by lifting, under this condition, the piston unit 8 to pressurize the pressure chamber 7 at a specified high pressure, the food A is processed at the high pressure.
