Abstract:

PURPOSE: To suppress the deterioration of the taste and flavor of a coffee drink during coffee extraction step, sterilization step and long-term storage by adding a protein, peptide or amino acid and vitamin E to the coffee drink.

CONSTITUTION: (A) A protein and/or peptide and/or amino acid and (B) vitamin E are added to coffee beans, coffee-extraction water or extracted coffee liquid. The amount of the component A to be added to the extracted coffee liquid is preferably 5-500ppm and that of the sum of the component A and the component B is preferably 1-1,000ppm. The component B is vitamin E of solubilized type or emulsified type.
