Abstract:
PURPOSE: To obtain a frying oil with addition of a specified amt. of esterified propoxylated glycerol which has a long life for frying and good stability, which hardly produces an odor and froth and which can be easily obtd. CONSTITUTION: An esterified propoxylated glycerol is added by about 5.0 to 95 wt.% to a frying oil. As for the esterified propoxylated glycerol, a compd. having resistance against hydrolysis during digestion and expressed by the formula is preferably used. In the formula, G is a glycerol group; n is in average 1 to 3; R is a long-chain paraffin or olefin hydrocarbon group obtd. from a fatty acid.
