Abstract:

PROBLEM TO BE SOLVED: To obtain an instant cooked rice containing a number of natural minor elements existing in deep ocean water, realizing the mineral balance of deep ocean water and suitable as a health food by processing cereal to a state having highest germination activity and fixing the state.
SOLUTION: Unpolished rice or other cereal 5 is immersed in desalted deep ocean water in a processing tank 4a to change the cereal to a state having germination activity. The cereal is further immersed in a concentrated deep ocean water to stop the germination and fix the cereal to the state having germination activity. The objective instant cooked rice containing mineral components absorbed from the deep ocean water and having high nutrition and germination activity can be produced by this method. The germination is stopped and the cereal is fixed to the state having germination activity by immersing the cereal in a mixture of concentrated deep ocean water left after the production of the desalted water, brine water produced from the deep ocean water and calcium sulfate precipitated from the deep ocean water.
