Abstract:

PURPOSE: To obtain a new compound expected its use as a highly safe natural type surfactant resistant to microbial contamination, cosmetic material, food additive, etc.
CONSTITUTION: An isoprimeveroside of the formula (broken line denotes β-1,4-bond or α-1,6-bond; R is alcohol, alkyldiol, monosaccharide, etc.), which can be obtained by bringing a new isoprimeverosyl transferase A derived from Eupenicillium bacteria [e.g. Eupenicillium M9 strain (FERM P-13342)] into contact with a heterooligosaccharide bearing isoprimeverose unit at the nonreducible terminal (e.g. xyloglucan heterooligo-heptasaccharide) to conduct reaction in the presence of an alcohol pref. at 30-50°C and at pH4-5.5 for normally several tens minutes to 48hr. The reaction is carried out normally in a solution such as an acetic acid buffer solution.
