Abstract:
PROBLEM TO BE SOLVED: To provide a jelly product which is excellent in shelf life in which, a quality of a jelly product suitable for deglutition can be maintained even when it is stored in a long term, with consideration of water-releasing property.SOLUTION: There is provided a jelly product comprising a container 11 in which a jelly 5 is sealed. The jelly 5 contains a gelatinization agent containing LM pectin, agar and other thickening polysaccharide, and a gelatinization promotor, and in the jelly, water-releasing property is substantially zero. The container 11 is formed of a packaging material 10 containing oxygen and a vapor barrier property, in which the jelly 5 subjected to deairing processing is sealed in the container 11 in a state not containing oxygen.SELECTED DRAWING: Figure 2
